Honey Almond Chicken
Saturday, August 27, 2011 at 10:45PM I made dinner again tonight (shocking I know)...another winner recipe too!! I'm trying to cook more often and try new things, I really enjoy it... especially when I don't screw it up. :) I decided to try honey almond chicken based on the ingredients I had available in the house. I paired it with brown rice and asparagus (my favorite veggie side dish). I recommend trying this recipe, it was really easy, and really good! :)
Honey Almond Chicken
- 2 boneless chicken breasts
- 1/4 cup butter
- 1 large onion, chopped
- 1/4 cup honey
- 1/2 cup slivered almonds
- 1/4 cup lemon juice
Directions
- Preheat oven to 350 degrees F (175 degrees C). Arrange chicken parts in a baking dish.
- Melt butter in a skillet over medium heat, and cook onion 5 minutes, until tender. Stir in honey, almonds, and lemon juice, and continue cooking 2 minutes, or until heated through. Pour over the chicken, coating each piece.
- Cover dish with aluminum foil. Bake chicken 15 minutes in the preheated oven. Remove foil, and continue baking ~15-25 minutes, until chicken juices run clear.
