I Made Dinner!...and it was Good!!
Saturday, August 20, 2011 at 10:48PM So tonight I made dinner (this is actually not that rare, but I really wanted to share my recipes tonight, because dinner was delicious). So I made chicken in a beer marinade, Avgolemono Soup (Nikki's recipe), sweet potato casserole (courtesy of Jeff's dad George and QVC - yes that's right...QVC), and green beans.
First I decided to make the Avgolemono Soup because George (Jeff's Dad) brought us some lemons from his lemon tree. This soup was amazing...possibly my new favorite soup. I did modify the recipe a bit...I substituted Orzo for the Arborio and I increased the amount from 1/4 cup to about 3/4 cup. Squeezing the juice from the fresh lemons was a bit of a mess but worth it. I recommend using cheese cloth over the lemons as you squeeze them to keep the seeds from getting in the juice. I guess now I need to buy a juicer!! The soup turned out great! I think next time I will try adding chicken as well. I have left-overs for a few days....LOVE it!
I decided on the beer chicken marinade based on the ingredients I had available...what does that day about me? lol...I don't even drink beer but lucky for me Jeff keeps the fridge stocked. :)
The chicken turned out moist and delicious. We grilled it 6 minutes on one side 5 minutes on the other.
I can't take credit for the sweet potato casserole...George got it on QVC...I had no idea that you could even buy food on QVC..but you can!!...and it's actually really good! This sweet potato casserole reminds me of the sweet potatoes they have at Ruth Chris....YUM!!

Avgolemono Soup - Basic Egg Lemon Soup
- 6 1/4 cups chicken stock
- 1/4 cup arborio (Italian rice) or other short-grain rice
- 2 eggs
- 6tbsp. fresh lemon juice
- salt & pepper
Garnish:
Lemon slices & parsley
Serves 4-6 People
1. Pour stock into a large sauce pan and bring to a boil. Add the rice, return to a boil, then simmer for 15-20 minutes, or according to instructions on the package, until tender.
2. Meanwhile, put the eggs and lemon juice in a bowl and whisk until frothy.
3. when the rice is cooked, lower the heat and whisking all the time, gradually add a ladleful of the stock to the lemon mixture. Pour the mixture into the soup and simmer, still whisking, until the soup thickens slightly. (Do not boil the mixture or it will curdle.) Season with salt and pepper.
4. Serve Hot add lemon wedge and parsley to garnish...enjoy!
Beer Chicken Marinade
- 1 cup beer
- 1/2 cup soy sauce
- 1 tablespoon oil
- 2 cloves garlic, minced
- 1 tablespoon onion, chopped
- 1 tablespoon parsley, chopped
Marinate chicken pieces for several hours. Barbecue chicken pieces brushing with sauce frequently.
